Curried Pork Goulash

I like to call this is my one-pot wonder.  Incredibly simple to make, but hits all the spots when it comes to flavour and comfort.  This healthy dish is fantastic when cooking for large numbers – simply double up the ingredients and you’re away!

To make this dish even healthier, use vegetable spread, or low fat butter in your dumplings and serve with plenty of fresh seasonal veggies.  For more of a curry kick, choose a curry paste on the hotter side, and a couple more dashes of cayenne pepper.  For those looking for a more lightly spiced dish, look to use a milder paste, and hold back on the cayenne, using just a little to add depth of flavour.
