Sometimes we all need to take some time from the ‘rat-race’ that is ‘normal’ life and make the most of the summer whilst we have the opportunity! In need of some time off, this weekend I headed straight for the coast, with with good friends and food in tow!
Packing my little stove and some fresh, seasonal ‘fishy’ themed ingredients, there wasn’t a soggy sandwich in sight when it came to our beach picnic. Pitching up in one of the sand dunes on Middle Beach at Studland, Dorset, we cracked open the ciders in anticipation of our seaside lunch!
Simple, quick and bang on season, mackerel is a great ingredient this time of year when cooking outdoors. Whether its camping, beach picnic, or simply enjoying a BBQ in your back garden, all you need is a pan, heat source and a dash of oil.
Simply heat a little oil in a pan until hot. Lay your mackerel fillets skin-side down and cook for 3-4 minutes until golden. Sprinkle with a little salt and pepper and a squeeze of lemon before flipping and cooking for a further 2 minutes.
In true rustic fashion I served my mackerel on a hunk of seeded bread along with a dollop of good, homemade tartare and a few fresh leaves. Within 6 minutes we all sat down to a delicious open mackerel sandwich enjoying the beautiful views of the Dorset coast!
